When sugar has completely dissolved, boil steadily until chutney has jam consistency

Dry roast all the spice ingredients and pound in a mortar and pestle or in a grinder finely

Combine 2 tablespoons orange juice with sugar, cornstarch, salt, and pepper

Curry leaves from 4 stalks, 2 medium-sized unripe mangoes, peeled and cut into chunks

In bowl, toss together shrimp, sherry (if using), cornstarch, ginger, soy sauce and pepper;

For chicken stock: Simmer 1 1/2 boneless chicken breasts, skinned, with 4 litres water for an hour.

Remove cheeks from mango, peel and dice flesh. Cut any excess flesh off the stone 

Heat butter and oil in a large saucepan. Add onion and cook over low heat until soft.
