garlic soupIngredients


2 tbsp olive oil


2 medium onions, chopped


1 head garlic, peeled and chopped


1 large sweet pepper, chopped


1 small hot pepper, finely chopped


2 cups stewed tomatoes


4 tbs finely-chopped fresh coriander leaves


1 tsp salt


1 tsp pepper


1 tsp cumin


6 cups water


2 eggs, beaten



Method


Heat oil in a saucepan. Saute onions, garlic and both sweet and hot peppers over medium heat for 10 minutes.


Stir in tomatoes and coriander leaves. Cover and cook over medium heat for 25 minutes.


Add remaining ingredients except eggs and bring to boil. Re-cover and cook for further 25 minutes. Stir in eggs and serve immediately.
